I partook of an all-Kentucky tasting menu in the Oakroom, originally the gentlemen's billiard hall. This is the state's first and only four-star, five-diamond dining place. It is traditional that the owner of the Derby winner walks in and pauses at the entry as all rise and cheer. Under the light of chandeliers I ate shrimp farm-raised in ponds set in former tobacco fields gone due to the no-smoking preferences of our times, Kentucky breaded spoonfish, limestone Bibb salad, lamb chops with bourbon sour-mash sauce, and a sorbet taken with silver spoon in a little ice bucket.
